Easy Salsa Ricotta Frittata Recipe
Delicious Frittata Recipe for Good Cheap Eats!
My Salsa Ricotta Frittata recipe is super-simple, really tasty, and downright dirt cheap. You only need a few things to make it, and the assembly comes together in just a few minutes. Once you get it into the oven to bake, you can go about your business. Answer emails, water the houseplants, break up the kids’ latest argument, go do that for about 40 minutes. When you come back, you will pull a beautiful frittata out of the oven.
Six Servings for $6
This frittata recipe makes about six servings, depending upon how many slices you cut it into, and how many slices each person eats. When I make this for my family (2 adults and 2 elementary school age children), I usually have 2 pieces left over. I end up sending that to work with my husband the next day.
The total estimated cost for this recipe is $6, making it about a $1 per serving, depending on a few factors. This estimate is based on if you purchase everything from a store. I also only counted the portion of the container to factor in the cost. For example, I bought a 4-cup container of salsa from my wholesale club for $4.10. So, I only counted the salsa cost as $1 for this recipe. If you were to grow your own tomatoes and salsa ingredients and preserve it with either lacto-fermentation or by canning, your expense would be even less.
Since we cannot have chickens were we live, I buy eggs from a friend of mine for $3/dozen. You can absolutely get cheaper, lower-quality eggs from the grocery store, but I don’t think it’s really worth the savings. Ideally, you would have your own laying hens. Since you are just scrambling the eggs, you can use powdered, whole eggs. Buy powdered whole eggs in bulk or make your own at home.
To make your own powdered eggs, scramble them and use your dehydrator to dry out all the water content. Powder them up in your coffee grinder. To store them, try mylar bags with O2 absorbers, or a mason jar that has had the air vacuumed out. I have this FoodSaver, and I use it to seal my mason jars for things like powdered eggs, as well as my herbs. It comes with an attachment hose, but you will need the to buy the attachment separately. Vacuum sealers aren’t inexpensive, but they are so worth it over time!

- 1/4 cup nutritional yeast flakes or parmesan cheese = $1

What the heck are nutritional yeast flakes?
Nutritional yeast is a great way to add extra nutrients, especially B Vitamins, including B12. It has a taste that is similar to parmesan cheese. Similar, but not exactly the same. Honestly, it’s a mild flavor that is completely overpowered by the salsa. Nutritional yeast is made by growing Saccharomyces Cerevisiae on molasses. Once it is harvested and washed, the yeast is heated to kill it, leaving it inactive. You can’t use it to make bread rise or ferment a batch of mead.
Because it is a shelf-stable source of B12, I keep it stocked in my pantry and an always looking for ways to use it. I get mine from Amazon here. It’s an even better deal with the Subscribe & Save option.
Frittatas are a classic part of Italian cooking, and they are extremely versatile. Granted, salsa isn’t part of Italian cooking. But, it is such a great, easy, quick cheat. You have tomatoes, onions, peppers, and seasonings all prepared for you. You could skip the salsa and make it more traditionally Italian by adding fresh basil, caramelized onions, artichokes, potatoes, and/or Italian sausage.
You can eat this as is, but I like to add some things to it. If I make it for breakfast, I’ll make some sausages or bacon to go with it. For lunch or dinner, I’ll usually serve soup or a salad (or both) with it. It’s also nice and filling with a dollop of sour cream on top too.

A simple, easy recipe with minimal prep and tastes delicious. Goes great with all sorts of side dishes, from breakfast sausage in the morning, to a vegetable stew to round out a dinner. Sour cream or yogurt makes a great topping.
- 12 Eggs
- 1 Cup Salsa
- 1 Cup Ricotta
- 1/4 Cup Nutritional Yeast Flakes or Parmesan Cheese
- Preheat oven to 350°F.
- Grease a baking dish (I prefer butter).
- Break eggs into a bowl and scramble.
- Add the salsa and the nutritional yeast, and whisk together.
- Pour egg mixture into a baking dish, and dollop the ricotta evenly around the pan.
- Bake for about 40 minutes or until the frittata no longer jiggles in the center.
